Poha is a popular breakfast in Western India. Poha is an instant recipe. Pohe is called in Maharashtra, and Poha is called in Gujarat. Rice poha is the main ingredient to make it. It is made with onion, spices, peanuts, and lemon juice. Serve with curd, salad, and raita.
Ingredients for Poha:
- Poha, 2 cup
- Onion 1, finely chopped
- 2 green chilies, finely chopped
- Mustard seed 1 tbsp
- Cumin seed ½ tbsp
- Curry leaves, 8 to 10
- Peanuts ½ cup
- Mustard oil, 4 tbsp
- Sugar 2 tbsp
- Salt to per taste
- Turmeric powder 1 tbsp
- Lemon juice pc.
- Crunchy sev
- Coriander leaves
Clean 2 cups of poha. You will need to use thick or medium flakes. This poha making for poha will turn mushy after rinsing them. Use a bowl to transfer it. Rinse them well with clean filtered water. Drain the water completely. Repeat the rinse and drain the water completely. Add 2 tbsp of sugar, ¾ tbsp of salt, and ¼ tbsp of turmeric powder. Mix using your hands without making the poha mushy. Rest for 10 minutes.
Use a kadai to add 2 tbsp oil, and roast the peanut on high to low flame. Roast the peanuts to turn them crunchy, and keep them aside. Now in the same pan, add 2 tbsp oil, 1 tbsp mustard seed, 1 tbsp cumin seed, and curry leaves. Sauté for a few minutes, now add green chili and chopped onion, and sauté for 2 minutes. Further, add ¼ tbsp of turmeric powder and salt as per taste. Sauté slightly. Add the poha and mix everything well. Simmer for 3 to 5 min; the Poha is cooked well. Add fried peanuts, coriander leaves, lemon juice, and crunchy sev. Mix it well. Serve with salad, raita, and curd as your choice. Enjoy your morning breakfast.
